Executive Chef Atanalian believes beautifully proportioned and balanced meals need to have variety throughout. He carefully selects fresh, local and organic ingredients and seasonings to create dishes with variety in color, taste, texture and flavors.
He buys from local farmers and distributors - any ingredients that don't meet his standards can be replaced that day. For really fresh, come by on a summer afternoon just before the dinner hour and you might catch him snipping the herbs growing on Sanctuary’s patio!
